Instant Pot Chicken Taco Bowls

Pulled chicken... meets taco...meets rice bowl. What's not to love? It gets better though, because if you have an instant pot this dish can be on the table in about 20 minutes! The chicken breasts only take 10 minutes to pressure cook, followed by a natural steam release of 10 minutes or less. While your chicken is cooking you can get your rice cooking, and veggies prepped. I used Uncle Ben's parboiled brown rice because it only takes 15-20 minutes. I like to cook my rice in low sodium chicken or vegetable broth for added flavour. If you don't have an instant pot you can browse the selection below. I highly recommend one if you are a fan of fast and easy cooking! (who isn't?!). There are so many delicious things you can make in your instant pot, both savoury and sweet!





Ingredients:

(2-3 servings)

  • 2-3 chicken breasts

  • 1/4 cup liquid (chicken broth or water)

  • 2 tsp chili powder

  • 2 tsp cumin

  • 2 tsp paprika

  • 2 tsp garlic powder

  • 2 tsp onion powder

  • 1 tsp crushed red pepper flakes (optional)

  • salt and pepper to taste

 

  • 1 cup 20 minute rice (uncooked)

  • romaine lettuce

  • tomatoes

  • red onion

  • avocado

  • cheddar cheese

  • salsa or taco sauce

  • plain greek yogurt or sour cream

  • cilantro garnish

Directions:

  1. Start your rice on the stove top, cook according to package directions.

  2. While your rice cooks, place your chicken, broth, and spices into your instant pot and set to pressure cook for 10 minutes.

  3. While your chicken cooks, prep your desired toppings for your taco rice bowl. I used your typical taco toppings: lettuce, tomatoes, red onion, cheddar cheese, avocado.

  4. When your chicken is finished pressure cooking, let it naturally release steam for 10 minutes. If you're in a rush you can quick release, but meat seems to come out more tender with a natural release.

  5. When the pressure has released, lift the lid and shred your chicken with 2 forks. It should fall apart pretty easily.

  6. Your rice should be cooked by now, so start your bowl with a generous serving of rice, followed by the shredded chicken. Make sure you get some of the spicy liquid too!

  7. Next add your salsa or taco sauce, and your desired toppings.

  8. Garnish with a dollop of plain greek yogurt or sour cream, and finely chopped cilantro if desired!



This was a huge hit with my little family of 3. I can never go wrong with a taco-inspired dish in my house, and the fact that it can be on the table in less than 30 minutes makes it a serious winner in my books!
